Each dish on the menu reflects the diverse heritage and culinary creativity of the archipelago, drawing inspiration from the northern highlands of Luzon to the vibrant seas of Visayas and the fertile lands of Mindanao. The restaurant’s tagline, “Travel the Philippines through food,” beautifully captures its mission to take diners on a gastronomic journey, offering a taste of regional delicacies with a modern twist.
The name “Siglo,” which means “century” in Spanish, highlights their goal of showcasing Filipino culinary traditions that have been passed down through generations. They feature heirloom recipes made with local ingredients, like pipinito (small cucumber), pansit-pansitan (leafy vine), and bignay (local raspberry) in their refreshing Siglo Salad. By using these heirloom ingredients, they also help support local farmers, which is a wonderful bonus.
The restaurant itself may be small, accommodating up to 50 diners, but it’s bursting with charm. The ethnic-inspired furniture and decor reflect a strong appreciation for Filipino culture, creating a warm and inviting atmosphere. While you wait for your meal, you can engage your mind with puzzles and trivia about Filipino food printed on the placemats—perfect for learning something new while you dine!
During our visit, we had the pleasure of trying the Lakbay Lokal Platter, a feast that truly represents the best of Filipino cuisine. The platter included the famous Bulalo from Batangas, a hearty soup made with beef shanks, sweet corn, and talinum (Philippine spinach) in a rich, flavorful broth. We also enjoyed Laing Dinamita, crispy triangles of laing filled with pork, and Crispy Tawilis, golden-fried freshwater sardines served with a sweet and spicy vinegar dip.
For those who love a bit of spice, the Himagsikan Wings were a highlight, featuring fried chicken wings glazed with bagoong and sriracha sauce. The Sisiglaw Salad mixed local greens with grilled pork slices tossed in patis vinaigrette—Siglo’s creative take on the classic sisig and kinilaw. We also savored the Pinyadobo Lagitik, featuring grilled pork belly chunks simmered in a rich adobo sauce, and Palabok Aligue, rice noodles drenched in crab fat sauce and topped with shrimp, boiled egg, and crushed pork rinds.
To wash it all down, we tried the refreshing Bukang Liwayway, a delightful turmeric blend with fresh pineapples. And for dessert, we indulged in Tilbok of Cavite, a sweet kakanin with shredded coconut, topped with langka and kesong puti, as well as Barako Jelly of Cavite, which offered a smooth and creamy flavor of carabao’s milk.
On the menu, you’ll find even more tasty dishes, each highlighting the importance of heritage cuisine while encouraging sustainable dining practices. The carefully curated selection pays homage to traditional flavors while adding a contemporary twist, ensuring delightful surprises for both locals and visitors alike. And don’t forget to check out their in-house sari-sari store, where you can grab snacks from all over the Philippines and unique pasalubong items from Tagaytay.

You can find Siglo Modern Filipino on the Ground Floor of View Park Hotel, located at 3500 Tagaytay-Calamba Road in Sungay East, Tagaytay City, Cavite. The restaurant is open from 7 AM to 10 PM Sunday through Friday and extends its hours until midnight on Saturdays.
